  • 1 cup almond flour
  • 1 3/4 cups icing sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup strawberry puree (fresh or frozen)
  • 1/4 cup unsalted butter (softened)
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until frothy. Gradually add granulated sugar and continue beating until stiff peaks form.
  3. Sift almond flour and icing sugar together in another bowl; fold into the meringue until smooth.
  4. Pipe circles onto prepared sheets using drawn guides. Let sit for 30 minutes to form a skin.
  5. Bake one sheet at a time for about 15 minutes until set. Allow to cool completely.
  6. For the filling, beat together softened butter, strawberry puree, heavy cream, and icing sugar until fluffy.
  7. Sandwich two macaron shells with the filling and enjoy!
