  • 1 cup cherry tomatoes, halved

  • Juice of 2 limes (about ¼ cup)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat. Add olive oil and sauté shrimp until pink and opaque (3–4 minutes per side). Remove from heat and let cool.
  2. While the shrimp cools, chop cherry tomatoes, cucumber, red onion, and avocados into bite-sized pieces.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Adjust seasoning to taste.
  4. In a large mixing bowl, combine cooked shrimp and chopped veggies. Pour the dressing over the mixture and gently toss to coat evenly.
