  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • Coconut flakes or sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix together the red velvet cake mix, eggs, vegetable oil, and water until smooth.
  2. Pour batter into a greased pan and bake for about 30 minutes or until a toothpick comes out clean. Allow to cool completely.
  3. In another bowl, beat cream cheese with powdered sugar and vanilla until fluffy.
  4. Crumble the cooled cake into fine pieces and mix with half of the cheesecake filling. Roll into one-inch balls.
  5. Chill the balls on parchment paper for an hour.
  6. Melt white chocolate chips; dip each ball until fully coated and place back on parchment paper. Sprinkle with coconut or sprinkles if desired.
