  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 24 oz frozen shredded hashbrowns
  • 10.5 oz can of cream of chicken soup
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 400°F (200°C) and spray a large baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
  2. In a bowl, mix frozen hashbrowns, cream of chicken soup, onion powder, and half of the cheddar cheese until well combined.
  3. Layer half of the hashbrown mixture in the baking dish; place seasoned chicken on top.
  4. Spoon the remaining hashbrown mixture over the chicken and sprinkle with the rest of the cheddar cheese.
  5. Top with panko breadcrumbs for added crunch.
  6. Bake for about 45 minutes or until bubbly and golden brown.
