  • 2 medium carrots, sliced
  • 2 celery stalks, chopped

  • 1 tsp dried thyme
  • 6 cups low-sodium chicken broth
  • ½ cup heavy cream

Instructions

  1. Gather and prep all ingredients: chop chicken into bite-sized pieces, dice onion, slice carrots and celery.
  2. In a large pot over medium heat, drizzle olive oil. Sauté onions and garlic until fragrant (about 2 minutes).
  3. Add chicken pieces along with oregano and thyme; cook until browned (about 5 minutes), stirring occasionally.
  4. Stir in carrots and celery; sauté for another 3 minutes until they soften slightly.
  5. Pour in chicken broth to cover all ingredients. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  6. Before serving, stir in the heavy cream until well combined; serve hot.
