  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • ¼ cup fresh herbs (basil, cilantro, or parsley), chopped
  • 1 cup chopped vegetables (bell peppers and peas)
  • 1 cup cooked protein (chicken or shrimp) (optional)

Instructions

  1. Rinse rice under cold water until the water runs clear to remove excess starch.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent (about 3 minutes).
  3. Add rinsed rice; toast for about 2 minutes until lightly golden.
  4. Pour in vegetable broth and add cumin and paprika. Bring to a boil, then reduce heat to low and cover the pot. Simmer for 18 minutes.
  5. Remove from heat and let sit covered for another 5 minutes. Fluff rice gently with a fork; fold in fresh herbs and chopped vegetables or protein if using.
  6. Serve warm, garnished with extra herbs.
