Spinach & Artichoke Stuffed Shrimp is a delightful seafood dish that brings together the rich flavors of creamy spinach and artichokes with succulent shrimp. 1 lb large raw shrimp (peeled and deveined)

2 cups fresh spinach

1 can (14 oz) artichoke hearts (drained and chopped)

8 oz cream cheese (softened)

½ cup grated Parmesan cheese

Minced garlic (optional)

Olive oil

Salt, pepper, and red pepper flakes


Instructions

Preheat your oven to 375°F (190°C). Sauté the spinach in olive oil until wilted, then chop finely.

In a bowl, mix the sautéed spinach, chopped artichokes, cream cheese, half the Parmesan, garlic, salt, pepper, and red pepper flakes until well combined.

Pat the shrimp dry and make an incision along the back to create a pocket. Stuff each shrimp with filling.

Arrange in a baking dish, top with remaining Parmesan and drizzle with olive oil.

Bake for 15-20 minutes until shrimp are opaque and topping is golden.

Notes

For added flavor, consider experimenting with different cheeses or spices in the stuffing. You can also prepare the stuffing ahead of time and refrigerate it until you’re ready to stuff the shrimp.
