Ingredients
2 boneless, skinless chicken breasts (6 oz each)
1 cup all-purpose flour
2 large eggs
1 cup seasoned breadcrumbs or panko
8 oz fresh mozzarella cheese
2 medium heirloom tomatoes
½ cup fresh basil leaves
Balsamic glaze (optional)
Instructions
Preheat your oven broiler.
Pound chicken breasts to an even thickness. Set up a dredging station with flour, beaten eggs, and breadcrumbs.
Season the chicken with salt and pepper, dredge in flour, dip in eggs, then coat with breadcrumbs.
Fry the breaded chicken in hot oil (350°F) until golden brown on both sides.
Transfer cooked chicken to an oven-safe platter, layer with tomatoes and mozzarella, then broil for 2-3 minutes until cheese melts.
Garnish with fresh basil and drizzle with balsamic glaze before serving.
Notes
