Ingredients
1 pound ground beef (80% lean)
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1 large yellow onion, chopped
4 cloves garlic, minced
2 cans (14 oz each) diced tomatoes
1 can (15 oz) kidney beans, rinsed and drained
Spices: 2 tbsp chili powder, 1 tbsp cumin, 1 tsp smoked paprika, ½ tsp cayenne pepper
Salt and pepper to taste
Instructions
Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain excess fat and transfer to the slow cooker.
In the same skillet, sauté onions until soft; add bell peppers and garlic until fragrant. Transfer to the slow cooker.
Add diced tomatoes and kidney beans to the slow cooker. Season with spices, salt, and pepper; stir well to combine.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Notes
For a spicier kick, add more jalapeños or hot sauce to taste. You can also substitute ground turkey or chicken for a lighter option. Feel free to add other veggies like corn or zucchini!
