Ingredients
1 pound gnocchi
4 cups fresh baby spinach
8 ounces sliced mushrooms (button or cremini)
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium-high heat. Sauté mushrooms for about 5 minutes until golden brown, then add garlic and cook for an additional minute.
Stir in spinach and cook until wilted, about 2 minutes. Remove from skillet and set aside.
In the same skillet, pour in heavy cream and simmer for 2 minutes before mixing in Parmesan cheese until melted.
Combine the sautéed vegetables back into the skillet with the creamy sauce, then add pre-cooked gnocchi, stirring gently to coat well.
Notes
For added protein, consider incorporating grilled chicken or chickpeas.
Feel free to swap spinach for kale or Swiss chard for a different flavor profile.
