Ingredients
1 quart (4 cups) of milk (whole or low-fat)
2 tablespoons of live culture (store-bought plain yogurt or yogurt starter)
Instructions
In a saucepan, heat the milk over medium heat until it reaches 180°F (82°C). Stir occasionally to prevent scorching.
Remove from heat and let the milk cool to about 110°F (43°C). Speed up cooling by placing the saucepan in a cold water bath if needed.
Mix the live culture with a few tablespoons of cooled milk until smooth, then whisk this back into the pot of cooled milk.
Cover and place in a warm environment (around 110°F) for 6-12 hours to ferment.
Strain the yogurt through a fine-mesh strainer lined with cheesecloth for 1-2 hours or overnight for a thicker consistency.
Notes
Experiment with flavor by adding fruits, honey, or spices after preparation.
Use Greek yogurt as a base for dressings or marinades to enhance meals.
