3 lbs beef roast (top sirloin or chuck)

4 hoagie rolls or baguettes

4 cups beef broth (homemade or low-sodium)

1 medium onion (thinly sliced)

Optional: 8 oz provolone or Swiss cheese


Instructions

Preheat oven to 300°F (150°C). Season the roast with salt and pepper, sear in a skillet until browned, then transfer to an oven-safe pot with beef broth. Cover and roast for 3-4 hours until tender.

In a separate skillet, caramelize sliced onions in olive oil over medium heat until golden brown.

Slice the roasted beef thinly and assemble sandwiches by filling rolls with meat, onions, and cheese (if using). Broil until cheese melts and bread edges toast.
