1 whole chicken (34 pounds)

1 tablespoon chopped rosemary

1 tablespoon chopped thyme

4 cloves garlic, minced

1 cup heavy cream

1 cup low-sodium chicken broth

2 tablespoons olive oil

Salt and pepper to taste


Instructions

1. Preheat the oven to 375°F (190°C).

2. Pat the whole chicken dry and season generously with salt, pepper, and minced garlic.

3. Rub the chicken with olive oil and sprinkle chopped herbs over it.

4. In a saucepan, sauté garlic in olive oil, then stir in heavy cream and chicken broth; simmer until thickened.

5. Place the chicken in a roasting pan and pour half of the creamy sauce over it. Roast for about 1 hour or until the internal temperature reaches 165°F (75°C).

Notes
