1 large egg
1 teaspoon peppermint extract
1 cup semi-sweet chocolate chips
1 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add egg and peppermint extract; mix well.
In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined. Fold in chocolate chips.
Drop rounded tablespoons onto prepared baking sheets, spacing them two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
Allow cookies to cool on the sheets for five minutes before transferring them to wire racks.
Notes
For an extra festive touch, sprinkle crushed candy canes on top before baking.
