1 cup unsalted butter (room temperature)

1 cup granulated sugar

1/2 cup brown sugar (packed)

1 large egg

1 cup semi-sweet chocolate chips

1 teaspoon baking soda

Instructions

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add egg and peppermint extract; mix well.

In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined. Fold in chocolate chips.
