Ingredients
3–4 ripe bananas
2 cups all-purpose flour
3/4 cup granulated sugar
2 large eggs
1/2 cup unsalted butter (softened)
1 tsp baking soda
2 tsp ground cinnamon
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. Mash the ripe bananas in a bowl until smooth.
3. In another bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time, mixing well.
4. Combine the dry ingredients (flour, baking soda, and cinnamon) in a separate bowl. Gradually mix into the wet ingredients along with the mashed bananas until just combined.
5. Prepare the cinnamon swirl mixture by combining brown sugar and cinnamon in a small bowl.
6. Pour half the batter into the loaf pan, sprinkle with the cinnamon mixture, then top with remaining batter.
7. Bake for 60-70 minutes or until a toothpick comes out clean.
