Ingredients

– 4 bone-in, skin-on chicken thighs (about 1.5 lbs)

– Salt and pepper to taste

Instructions

1. Marinate the chicken thighs in olive oil, garlic, herbs, salt, and pepper for at least 30 minutes.

3. Arrange marinated chicken on a baking sheet lined with parchment paper alongside the potatoes.

4. Roast for approximately 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.

5. Let rest for 5 minutes before serving.

Notes

For added flavor, experiment with different marinades or seasonal vegetables like carrots or Brussels sprouts.

You can also use sweet potatoes for a unique twist.
