Ingredients

– 2-3 lbs beef chuck roast (cut into 1-inch cubes)

– 3-4 medium carrots (sliced)

– 2-3 medium Yukon Gold potatoes (cubed)

– 1 large onion (diced)

– 3-4 cloves garlic (minced)

– 2 tbsp tomato paste

– 4 cups low-sodium beef broth

– 1 tbsp Worcestershire sauce

– Fresh thyme and bay leaves


Instructions

1. Sear the cubed beef in olive oil until browned on all sides. Remove from pot.

2. Sauté diced onion in the same pot, then add minced garlic, sliced carrots, and cubed potatoes.

3. Stir in tomato paste and gradually add beef broth while scraping up flavorful bits from the bottom.

4. Return seared beef to the pot with Worcestershire sauce and herbs. Season to taste.

5. Bring to a boil, then reduce heat and simmer for at least an hour until meat is tender.
