Ingredients
– 16 oz cream cheese (softened)
– 8 oz high-quality white chocolate (melted)
– ¾ cup granulated sugar
– ½ cup brewed espresso
– 1 cup sour cream
– 3 large eggs (room temperature)
– 1 tsp vanilla extract
– Graham cracker crust (made from 1 ½ cups crushed graham crackers, ½ cup melted butter, & ¼ cup sugar)
Instructions
1. Preheat oven to 325°F (163°C). Prepare graham cracker crust and bake for 10 minutes.
2. Melt white chocolate using a double boiler and let cool slightly.
3. In a mixing bowl, beat cream cheese and sugar until fluffy. Add eggs one at a time, then stir in sour cream, brewed espresso, vanilla extract, and melted white chocolate.
4. Pour filling into cooled crust and bake for about one hour until slightly jiggly in the center.
5. Allow to cool before chilling in the refrigerator for at least four hours or overnight.
