1 ½ cups graham cracker crumbs

– ½ cup unsalted butter (melted)

– 24 ounces cream cheese (softened)

– 1 cup granulated sugar

– 3 large eggs

– 1 teaspoon vanilla extract

– 8 ounces semi-sweet chocolate (chopped)

– ½ cup heavy cream

– ½ cup shelled pistachios (finely chopped)


Instructions

Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan. Bake for 10 minutes.

2. Beat softened cream cheese until smooth; gradually add sugar, then eggs and vanilla. Pour over the cooled crust.

3. Bake for about one hour until slightly jiggly in the center. Cool in the oven with the door ajar.

4. For ganache, heat heavy cream and pour over chopped chocolate; stir until smooth. Pour over the cooled cheesecake.

5. Garnish with chopped pistachios before chilling in the refrigerator for at least four hours.
