Description

This refreshing and healthy Mediterranean-inspired Tzatziki Chicken Salad combines juicy grilled chicken, crisp veggies, and a creamy homemade tzatziki sauce for a light yet satisfying meal perfect for lunch or dinner.

 


Ingredients

  • Chicken Breast: 1 lb (450 g), boneless and skinless
  • Greek Yogurt: 1 cup (240 g), plain
  • Cucumber: 1 medium, grated and squeezed dry
  • Garlic: 2 cloves, minced
  • Olive Oil: 3 tbsp
  • Lemon Juice: 2 tbsp, freshly squeezed
  • Fresh Dill: 2 tbsp, chopped
  • Salt & Pepper: 1 tsp salt, ½ tsp pepper
  • Mixed Greens: 4 cups
  • Cherry Tomatoes: 1 cup, halved

Instructions

  • Marinate the Chicken:
    • Mix olive oil (2 tbsp), garlic (1 clove), lemon juice (1 tbsp), salt (½ tsp), pepper (¼ tsp), and dill (1 tbsp). Coat chicken and marinate for 30 minutes.
  • Cook the Chicken:
    • Grill or bake the chicken until fully cooked (165°F/74°C). Let rest, then slice into cubes.
  • Make the Tzatziki Sauce:
    • Combine Greek yogurt, grated cucumber, garlic (1 clove), lemon juice (1 tbsp), dill (1 tbsp), salt (½ tsp), and pepper (¼ tsp). Mix and chill.
  • Assemble the Salad:
    • In a bowl, layer mixed greens, diced chicken, cherry tomatoes, and drizzle with tzatziki sauce. Toss gently and serve.

Notes

  • For added texture, include crumbled feta or kalamata olives.
  • Leftover chicken works well for meal prep; store separately from salad to maintain freshness.
