Ingredients
- Chicken Breast: 1 lb (450 g), boneless and skinless
- Greek Yogurt: 1 cup (240 g), plain
- Cucumber: 1 medium, grated and squeezed dry
- Garlic: 2 cloves, minced
- Olive Oil: 3 tbsp
- Lemon Juice: 2 tbsp, freshly squeezed
- Fresh Dill: 2 tbsp, chopped
- Salt & Pepper: 1 tsp salt, ½ tsp pepper
- Mixed Greens: 4 cups
- Cherry Tomatoes: 1 cup, halved
Instructions
- Marinate the Chicken:
- Mix olive oil (2 tbsp), garlic (1 clove), lemon juice (1 tbsp), salt (½ tsp), pepper (¼ tsp), and dill (1 tbsp). Coat chicken and marinate for 30 minutes.
- Cook the Chicken:
- Grill or bake the chicken until fully cooked (165°F/74°C). Let rest, then slice into cubes.
- Make the Tzatziki Sauce:
- Combine Greek yogurt, grated cucumber, garlic (1 clove), lemon juice (1 tbsp), dill (1 tbsp), salt (½ tsp), and pepper (¼ tsp). Mix and chill.
- Assemble the Salad:
- In a bowl, layer mixed greens, diced chicken, cherry tomatoes, and drizzle with tzatziki sauce. Toss gently and serve.
Notes
- For added texture, include crumbled feta or kalamata olives.
