Ingredients

  • Chicken Breasts: 4, boneless and skinless
  • Cream Cheese: 8 oz, softened
  • Spinach: 2 cups, fresh and chopped
  • Garlic: 2 cloves, minced
  • Shredded Cheese: 1 cup (mozzarella or cheddar)
  • Olive Oil: 2 tbsp
  • Seasonings: 1 tsp each of salt, pepper, and Italian seasoning
  • Butter: 2 tbsp (for cream sauce)
  • Heavy Cream: 1 cup
  • Shredded Cheese: ½ cup (for cream sauce)

Instructions

  1. Prepare the Filling:
    • Mix cream cheese, spinach, garlic, ½ cup shredded cheese, salt, pepper, and Italian seasoning until smooth.
  2. Stuff the Chicken:
    • Slice pockets into chicken breasts, stuff with the filling, and secure with toothpicks if needed.
  3. Grill the Chicken:
    • Preheat the grill to medium-high heat. Brush chicken with olive oil and grill for 6 minutes per side, or until golden and the internal temperature reaches 165°F (75°C).
  4. Make the Cream Sauce:
    • In a saucepan, melt butter over medium heat, sauté garlic, then stir in heavy cream. Simmer while whisking, add shredded cheese, and cook until smooth and slightly thickened.
  5. Serve:
    • Let chicken rest for 5 minutes, slice, and serve with the cream sauce drizzled on top.

Notes

  • For extra flavor, add sun-dried tomatoes or mushrooms to the filling.
  • If you don’t have a grill, bake the stuffed chicken at 375°F (190°C) for 25-30 minutes.
