Ingredients
- Chicken Breasts: 4, boneless and skinless
- Cream Cheese: 8 oz, softened
- Spinach: 2 cups, fresh and chopped
- Garlic: 2 cloves, minced
- Shredded Cheese: 1 cup (mozzarella or cheddar)
- Olive Oil: 2 tbsp
- Seasonings: 1 tsp each of salt, pepper, and Italian seasoning
- Butter: 2 tbsp (for cream sauce)
- Heavy Cream: 1 cup
- Shredded Cheese: ½ cup (for cream sauce)
Instructions
- Prepare the Filling:
- Mix cream cheese, spinach, garlic, ½ cup shredded cheese, salt, pepper, and Italian seasoning until smooth.
- Stuff the Chicken:
- Slice pockets into chicken breasts, stuff with the filling, and secure with toothpicks if needed.
- Grill the Chicken:
- Preheat the grill to medium-high heat. Brush chicken with olive oil and grill for 6 minutes per side, or until golden and the internal temperature reaches 165°F (75°C).
- Make the Cream Sauce:
- In a saucepan, melt butter over medium heat, sauté garlic, then stir in heavy cream. Simmer while whisking, add shredded cheese, and cook until smooth and slightly thickened.
- Serve:
- Let chicken rest for 5 minutes, slice, and serve with the cream sauce drizzled on top.
