Ingredients

  • Beef Chuck Roast: 3-4 lbs (1.4-1.8 kg)
  • Garlic: 6 cloves, minced
  • Fresh Herbs: 2 sprigs each of rosemary and thyme (or 1 tsp dried)
  • Onion: 1 large, chopped
  • Beef Broth: 2 cups (480 ml)
  • Salt and Pepper: To taste
  • Olive Oil: 1 tbsp

Instructions

  1. Prepare the Beef:
    • Season beef with salt and pepper.
    • Sear in a hot skillet with olive oil until browned on all sides (about 4 minutes per side).
  2. Prepare Aromatics:
    • Sauté onion and garlic in the same skillet until fragrant. Stir in fresh herbs and transfer to the slow cooker.
  3. Slow Cook:
    • Place seared beef on top of the aromatics. Pour beef broth around the roast. Cover and cook on low for 8 hours or high for 5-6 hours.
  4. Serve:
