- 1 lb chicken breast, cut into bite-sized pieces
- 3 cups fresh spinach
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream (or Greek yogurt)
- 1 cup grated cheddar cheese
- 2 cloves garlic, minced
- 1 medium onion, finely chopped
- 2 tbsp olive oil
Instructions
Step 1: Preheat Oven
- Preheat the oven to 350°F (175°C).
Step 2: Sauté Vegetables
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant, about 5 minutes. Add spinach and cook until wilted, 3 minutes.
Step 3: Cook Chicken
- In the same skillet, cook chicken pieces until no longer pink, about 6-7 minutes. Set aside.
Step 4: Mix Ingredients
- In a bowl, mix cream of mushroom soup, sour cream, chicken, and the sautéed veggies. Stir in half the grated cheese.
Step 5: Bake
- Transfer the mixture to a greased baking dish. Top with the remaining cheese. Bake for 35-40 minutes until bubbly and golden brown.

- Substitute chicken thighs for a richer flavor.
- Use mozzarella or Monterey Jack cheese for variety.
