- 4 slices of hearty bread (sourdough or whole grain)
- 2 cups shredded sharp cheddar cheese
- 8 oz cream cheese, softened
- 4 fresh jalapeños, roasted and seeded
- 2 tbsp unsalted butter
Instructions
- Roast Jalapeños: Preheat oven to 400°F (200°C). Roast jalapeños on a lined baking sheet for 20 minutes until charred. Cool, seed, and slice.
- Prepare Cheese Mix: Blend cream cheese and shredded cheddar in a bowl until smooth.
- Assemble Sandwich: Spread cheese mixture on one side of bread slices. Layer roasted jalapeños on one slice and cover with another slice, cheese side down.
- Grill Sandwich: Melt butter in a skillet over medium heat. Grill sandwiches for 3-4 minutes on each side until golden brown and cheese is melted.
