A spicy twist on a classic, this sandwich combines roasted jalapeños, creamy cheeses, and crispy, buttery bread for a melty, flavorful experience perfect for lunch or a cozy dinner.


Ingredients

  • 4 slices of hearty bread (sourdough or whole grain)
  • 2 cups shredded sharp cheddar cheese
  • 8 oz cream cheese, softened
  • 4 fresh jalapeños, roasted and seeded
  • 2 tbsp unsalted butter

Instructions

  • Roast Jalapeños: Preheat oven to 400°F (200°C). Roast jalapeños on a lined baking sheet for 20 minutes until charred. Cool, seed, and slice.
  • Prepare Cheese Mix: Blend cream cheese and shredded cheddar in a bowl until smooth.
  • Assemble Sandwich: Spread cheese mixture on one side of bread slices. Layer roasted jalapeños on one slice and cover with another slice, cheese side down.
  • Grill Sandwich: Melt butter in a skillet over medium heat. Grill sandwiches for 3-4 minutes on each side until golden brown and cheese is melted.
