Description

This Lazy Chicken Parmesan Grilled Cheese is a crispy, cheesy twist on a classic Italian dish. Packed with tender chicken, marinara sauce, and gooey mozzarella cheese, it’s the perfect comfort food made simple!

 


Ingredients

  • Chicken breast: 1 lb, thinly sliced (or 2 cups cooked, shredded chicken)
  • Marinara sauce: 1 cup
  • Mozzarella cheese: 8 oz, shredded
  • Bread: 4 slices (sourdough or ciabatta recommended)
  • Olive oil or butter: 2 tbsp
  • Salt and pepper: To taste

Instructions

  1. Cook the Chicken
    Heat 1 tbsp olive oil in a skillet over medium heat. Season chicken with salt and pepper, cook for 3–4 minutes per side, then rest and slice into bite-sized pieces.
  2. Assemble the Sandwich
    Spread olive oil or butter on one side of each bread slice. On the unbuttered side, layer mozzarella, marinara sauce, cooked chicken, and more mozzarella. Top with a second slice of bread (buttered side out).
  3. Grill the Sandwich
    Heat a skillet over medium heat. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
  4. Serve Hot
    Slice diagonally and serve with fresh basil garnish or extra marinara sauce for dipping.

Notes

  • For added flavor, mix garlic into the olive oil or butter before spreading.
  • Swap mozzarella for provolone or a mix of cheeses for variety.
  • Use leftover chicken to save time.
