Ingredients
- Chicken breast: 1 lb, thinly sliced (or 2 cups cooked, shredded chicken)
- Marinara sauce: 1 cup
- Mozzarella cheese: 8 oz, shredded
- Bread: 4 slices (sourdough or ciabatta recommended)
- Olive oil or butter: 2 tbsp
- Salt and pepper: To taste
Instructions
- Cook the Chicken
Heat 1 tbsp olive oil in a skillet over medium heat. Season chicken with salt and pepper, cook for 3–4 minutes per side, then rest and slice into bite-sized pieces. - Assemble the Sandwich
Spread olive oil or butter on one side of each bread slice. On the unbuttered side, layer mozzarella, marinara sauce, cooked chicken, and more mozzarella. Top with a second slice of bread (buttered side out). - Grill the Sandwich
Heat a skillet over medium heat. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted. - Serve Hot
Slice diagonally and serve with fresh basil garnish or extra marinara sauce for dipping.
