    • 2 cups all-purpose flour

    • 1 tbsp baking powder

    • 3 large eggs

    • 2 tsp grapefruit zest
  • For the Syrup:
    • 1 cup freshly squeezed grapefruit juice
    • ½ cup granulated sugar
  • For the Meringue:
    • 3 large egg whites
    • ½ cup granulated sugar
    • 1 tsp cream of tartar

Instructions

  1. Prepare the Cake:
    • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • In a bowl, whisk flour, sugar, baking powder, and salt. In another bowl, combine eggs, melted butter, grapefruit juice, and zest. Gradually mix wet ingredients into dry until just combined.
    • Pour batter into the baking dish and bake for 25-30 minutes, or until a toothpick comes out clean. Cool for 10 minutes.
  2. Add the Syrup:
    • In a saucepan, simmer grapefruit juice and sugar until slightly thickened (5-7 minutes). Poke holes in the cooled cake and pour syrup evenly over the surface. Let sit for 30 minutes.
  3. Prepare the Meringue:
    • Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until glossy with stiff peaks.
    • Spread meringue over the cake, covering completely. Broil for 2-3 minutes until lightly browned.
  4. Serve and Enjoy:
    • Let the cake cool, slice, and serve. Store leftovers in the refrigerator.
