- Prepare the Cake:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a bowl, whisk flour, sugar, baking powder, and salt. In another bowl, combine eggs, melted butter, grapefruit juice, and zest. Gradually mix wet ingredients into dry until just combined.
- Pour batter into the baking dish and bake for 25-30 minutes, or until a toothpick comes out clean. Cool for 10 minutes.
- Add the Syrup:
- In a saucepan, simmer grapefruit juice and sugar until slightly thickened (5-7 minutes). Poke holes in the cooled cake and pour syrup evenly over the surface. Let sit for 30 minutes.
- Prepare the Meringue:
- Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until glossy with stiff peaks.
- Spread meringue over the cake, covering completely. Broil for 2-3 minutes until lightly browned.
