  • 3 cups softened ice cream (your favorite flavor)
  • 8 oz semi-sweet or dark chocolate chips (for coating)
  • 1 cup heavy whipping cream (for whipped cream)
  • Optional toppings: sprinkles, crushed nuts, caramel drizzle

Instructions

  1. Prepare the Brownies:
    Bake brownies according to the package instructions or your favorite recipe. Once cooled, cut into 1-inch cubes and set aside.
  2. Scoop the Ice Cream:
    Scoop ice cream into 2-inch balls, using about 3 cups total. Place on a parchment-lined baking sheet and freeze for at least 1 hour.
  3. Assemble the Bombes:
    Flatten a brownie cube, then place an ice cream ball on top. Press down gently and top with another brownie cube. Repeat for all bombes and freeze again.
  4. Prepare the Chocolate Coating:
    Melt the chocolate chips in a double boiler or microwave until smooth. Dip each assembled bombe into the melted chocolate, ensuring it’s fully coated. Return to the parchment-lined tray.
  5. Freeze and Serve:
    Freeze bombes for 2 more hours until the chocolate coating hardens. Serve with whipped cream and optional toppings like sprinkles or caramel drizzle.
