Description

A hearty, cheesy, and crunchy casserole loaded with ground beef, black beans, and tortilla chips, perfect for a quick and comforting meal that packs a flavorful punch!

 


Ingredients

  • 1 lb (450g) lean ground beef
  • 1 can (10.5 oz or 300g) cream of mushroom soup
  • 2 cups (200g) shredded cheddar cheese, divided
  • 3 cups (150g) crushed tortilla chips
  • 1 can (15 oz or 425g) black beans, drained and rinsed

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C).
  2. Cook Beef: Brown the ground beef in a skillet over medium heat, breaking it into crumbles. Drain excess grease.
  3. Mix Ingredients: In a bowl, combine cooked beef, cream of mushroom soup, black beans, and half the cheddar cheese.
  4. Assemble Casserole: Layer half the crushed tortilla chips in a 9×13-inch baking dish. Add half the beef mixture, then repeat layers. Top with remaining cheese.
  5. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10–15 minutes until the cheese is bubbly and golden.

Notes

  • Swap black beans for pinto or kidney beans for variety.
  • Add a sprinkle of diced jalapeños or salsa for extra spice.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
