Ingredients

  • 1 lb (450g) lean ground beef
  • 4 medium russet potatoes, peeled and cubed
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, peeled and sliced
  • 3 cloves garlic, minced
  • 4 cups (1 liter) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp black pepper
  • Salt to taste
  • Optional: Red pepper flakes for heat

Instructions

  • Brown the Ground Beef
    • Cook ground beef in a skillet over medium heat for 7–10 minutes until browned. Drain excess fat and transfer to a slow cooker.
  • Prepare Vegetables
    • Peel and cube potatoes. Slice carrots, chop the onion, and mince garlic.
  • Combine Ingredients
    • Add potatoes, carrots, onion, and garlic to the slow cooker with the beef. Pour chicken broth over the ingredients and stir in thyme, paprika, black pepper, and salt.
  • Slow Cook
    • Cook on low for 6 hours or high for 3 hours. Stir occasionally.
  • Add Heavy Cream
    • After cooking, stir in heavy cream and let the soup heat for an additional 10 minutes before serving.

Notes

  • For a thicker consistency, mash some of the potatoes with a fork before adding the cream.
  • Adjust seasonings to taste before serving.
  • Serve with crusty bread for a complete meal.
