- 1 lb (450g) lean ground beef
- 4 medium russet potatoes, peeled and cubed
- 1 medium yellow onion, finely chopped
- 2 medium carrots, peeled and sliced
- 3 cloves garlic, minced
- 4 cups (1 liter) chicken broth
- 1 cup (240ml) heavy cream
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp black pepper
- Salt to taste
- Optional: Red pepper flakes for heat
Instructions
- Brown the Ground Beef
- Cook ground beef in a skillet over medium heat for 7–10 minutes until browned. Drain excess fat and transfer to a slow cooker.
- Prepare Vegetables
- Peel and cube potatoes. Slice carrots, chop the onion, and mince garlic.
- Combine Ingredients
- Add potatoes, carrots, onion, and garlic to the slow cooker with the beef. Pour chicken broth over the ingredients and stir in thyme, paprika, black pepper, and salt.
- Slow Cook
- Cook on low for 6 hours or high for 3 hours. Stir occasionally.
- Add Heavy Cream
- After cooking, stir in heavy cream and let the soup heat for an additional 10 minutes before serving.
Notes
- For a thicker consistency, mash some of the potatoes with a fork before adding the cream.
- Adjust seasonings to taste before serving.
- Serve with crusty bread for a complete meal.
