- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 8 oz mushrooms (cremini or button, sliced)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1 medium onion (diced)
- 2 tbsp olive oil
- Salt & pepper (to taste)
- Optional: Thyme or parsley (for garnish)
Instructions
- Sauté the chicken: Heat olive oil in a skillet. Cook the chicken until golden brown and fully cooked (165°F). Remove and set aside.
- Cook onions and garlic: In the same skillet, sauté onions until translucent, then add garlic and cook for another minute.
- Add mushrooms: Stir in the sliced mushrooms, salt, and pepper. Cook for 5-7 minutes until softened.
- Make the creamy sauce: Pour in the heavy cream, stirring continuously. Simmer for 5-10 minutes until the sauce thickens.
- Combine: Add the cooked chicken back to the skillet and stir to coat in the creamy sauce. Simmer for another 2-3 minutes to combine flavors.
Notes
- For a richer flavor, add a pinch of thyme or parsley as garnish.
