- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. - Mix Dry Ingredients:
In a medium bowl, whisk together flour and baking soda. Set aside. - Cream Butter and Sugars:
Beat softened butter, brown sugar, and granulated sugar in a large bowl until light and fluffy, about 3 minutes. - Add Wet Ingredients:
Mix in the egg and vanilla extract until fully incorporated. - Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing. - Form the Dough:
Scoop out about 2 tablespoons of dough per cookie, rolling into balls. Place them on the parchment-lined baking sheet, leaving space between them. - Add the Cookie Butter Filling:
Create a small indentation in the center of each dough ball using your thumb. Fill with about 1 tablespoon of cookie butter, then fold the dough edges over to seal the filling inside. - Bake:
Bake for 10 minutes or until the edges are golden brown and the centers are slightly underbaked. Cool briefly on the baking sheet, then transfer to wire racks to cool completely.
